Last Update: 2006-04-19 These are random notes I will fill in later.
- 3/4 cup barley malt or rice syrup (reduce liquid in recipe by 1/4 cup)
- Grade B maple syrup (reduce liquid in recipe by 3 tablespoons)
- agave nectar (reduce liquid in recipe by 1/4 cup)
- 1 tablespoon stevia liquid (reduce liquid in recipe by 1 tablespoon)
- 2 to 3 tablespoons stevia (dried herb)
- 1/2 cup apple juice syrup or reduced apple juice (reduce liquid in recipe by 2 tablespoons)
Use brown rice syrup or light agave nectar to replace
sugar or honey in light recipes (light refers to taste and texture, e.g.
lemon custard).
Use any of the suggested replacements to replace sugar
in heavy recipes. Use stevia, brown rice syrup, barley malt, or apple
juice for healing recipes (desserts that rely on vegetable qualities
rather than sweetners and fats, eg.g sweet potato pudding with tangerine zest)
