Quick Chili


Quick 1/2 lb. Chili

Ingredients: 1/2 lb. ground beef (previously cooked okay) 1 green bell pepper 1 red bell pepper 1 hot pepper (habanero, jalapeno, anaheim or pasilla) 1 can cooked black, pinto, red or pink beans, or diced tomatoes (14-16 oz.) 1 Tbsp chili powder 1 tsp salt 1/8 tsp ground black pepper
Directions:
Cook ground beef. Saute' peppers. Add ground beef and remaining ingredients to peppers and simmer 10-15 minutes.

Serves 2-3


Chili Mix

Ingredients: 1 batch Quick Chili (above) 1 can creamed corn (14-16 oz.) 1 can pitted olives (14-16 oz.) 1 can cooked black, pinto, red or pink beans, or diced tomatoes (14-16 oz.)
Directions:
Before final simmering, add additional canned ingredients. Simmer as directed.

Tamale Pie

Ingredients: 1 batch Quick Chili (above) 1 can creamed corn (14-16 oz.) 1 can pitted olives (14-16 oz.) 1 c. yellow corn meal 1 c. hot water 1 sprig fresh cilantro (optional garnish)
Directions:
Before allowing final simmering, add additional canned ingredients and simmer as directed, then add corn meal, then water slowly. Allow to simmer an additional 5 minutes. Place in 350f oven for 20 minutes.

Ground Beef Seasoning

8 parts salt 2 parts ground cumin or coriander 1 part black pepper, fine ground
